Ingredients: (For 1 lb Salmon)
1 tsp orange juice
1 tsp lemon juice
1/2 tsp salt
1/2 tsp crushed black pepper
1 tsp fresh/dried Basil or Dill
Dash of olive oil
Marinate washed, pat dried fish with above mentioned ingredients for 30 minutes.
Cut a baking paper large enough to enclose the salmon on all sides. Place salmon in the center of baking paper.
Carefully wrap the salmon, folding the sides to seal in all the juices.
Now bake for 15 – 20 minutes or until tender at 350 degree. Beware not to overcook or the salmon will dry out. Serve immediately with rice/ salad.
